I have hundreds of recipes that I have collected over the years. There are a few things I have created either by accident or a last ditch effort to throw something together for dinner. Some of these recipes are from weight watchers, various recipe sites, magazines and of course family hand me downs. I hope you can benefit from these quickies as much as I have and still do!

Mexican Chicken Breast

Prep Time: 15 min Category: Quick Main Dish Servings: 12

Ingredients:
Boneless skinless chicken breast
Taco seasoning
Salsa
Sour cream
Shredded cheese

Instructions: Put the taco seasoning in a plastic bag, throw your chicken breast in and shake. Bake that on 375 for about 30 minutes. When it’s cooked, add some salsa and shredded cheese right on top of each breast, and cook for just a couple minutes more to heat up the salsa and melt the cheese. Sour cream is a good topping for this chicken and you can always use low fat if you are cutting calories.

**The kids like green bean and corn mixed with this dinner :-)

Quick Chicken Pot Pie!!

Prep Time: 15 min Category: Quick Main Dish Servings: 12

Ingredients:
1 Rotisserie Chicken
2 Deep Dish Frozen Pie Shells
2 Cans Mixed Vegetables
1 Can Cream of Chicken Soup
1 Can Cream of Mushroom Soup
Salt & Pepper to taste!

Instructions: De-bone chicken and put in large mixing bowl. Add mixed vegetables, cream of chicken soup and then mix in cream of mushroom soup to desired thickness. Add salt and pepper to taste or any other seasonings you would like. Fill 2 bottom pie shells with mixture. Place the 2 remaining pie shells on top. Place both pies on a cookie sheet and cook at 350 until a nice light brown.

Note: This is a great quick fix dinner that is roughly $20.00 and it is a meal and left overs! I usually toss a salad together to go with! My family loves chicken pot pie night and I vary this with left over pork or beef! Enjoy!!
